    Ingredients:
    9 cups of thinly sliced peaches
    1/2 cup of granulated sugar
    1 tablespoon of lemon juice
    1/2 teaspoon of ground cinnamon
    2 tablespoons of cornstarch
    1/2 teaspoon of salt
    For the topping: 12 tablespoons of chilled and grated butter
    1/2 cup of boiling water
    2 cups of all-purpose flour
    1 cup of granulated sugar
    1 tablespoon of baking powder
    1/2 teaspoon of salt
    For the cinnamon sugar topping: 1/3 cup of granulated sugar plus 2 teaspoons of cinnamon
    Instructions:
    1. Preheat your oven to 425°F. Grease a 9×13-inch baking dish and set aside.
    2. In a large bowl, mix peaches, 1 cup sugar, lemon juice, 1/2 tsp cinnamon, cornstarch, and 1/2 tsp salt. Transfer to greased baking dish. Bake for 10 minutes.
    3. While baking, in a separate bowl, combine flour, 1 cup sugar, baking powder, and 1/2 tsp salt. Add in boiling water. This will create a lumpy batter.
