Garlic Mushroom Grilled Cheese

    Ingredients
    4 slices of your favorite bread
    1 cup of sliced mushrooms
    2 cloves of garlic, minced
    1 tablespoon of butter, plus more for spreading on bread
    1 tablespoon of olive oil
    4 slices of cheddar or Swiss cheese
    Salt and pepper to taste
    Directions
    Heat the olive oil in a pan over medium heat. Add the garlic and mushrooms, sautéing until the mushrooms are soft and golden. Season with salt and pepper to taste.
    Spread butter on one side of each bread slice. Flip the slices over and stack cheese on the unbuttered sides.
    Spoon the sautéed mushrooms onto the cheese on two of the slices. Top with the remaining slices of bread, buttered side up.
    Heat a clean skillet over medium heat and place the sandwiches in the pan, pressing them lightly with a spatula.
    Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

    Remove from heat, slice in half, and serve warm.

    To mix things up, try different types of mushrooms like shiitake or portobello for a new flavor. You can experiment with cheese varieties as well; perhaps a smoky Gouda or a sharp provolone. For an extra layer of flavor, add some caramelized onions to the mushroom mix, or if you like a little crunch, throw in some arugula or spinach between the cheese and mushrooms before cooking.
