Easy Pistachio Cheesecake: A Must-Have for Your Snacks
An easy-to-make pistachio cheesecake, with a delicious taste and a creamy texture, perfect for all lovers of light and fruity desserts.
Ingredients (for 6-8 people):
250g of shortbread cookies
120 g of melted butter
300g of natural fresh cheese
150g pistachios (unsalted and unplanned)
150 g of sugar
3 eggs
200ml whole liquid cream
1 tablespoon of pistachio batter
1 teaspoon vanilla powder
Lil icing sugar for decoration

Preparing the base:
Grate the shortbread cookies and mix with the melted butter. Cup this mixture into a hinged mold and let it sit in the refrigerator for 30 minutes.
Prepare the filling:
Mix the pistachios until you get a fine dough. In a large bowl, mix together fresh cheese, sugar, pistachio batter, and vanilla. Insert eggs one by one, beating well after each addition.
Add the cream:
Gently incorporate the liquid cream into the preparation until the dough is smooth.
Cooking:
Pour the mixture over the cooled biscuit base and bake at 160Β°C for 40 minutes. Center must be firm, but slightly wobbly.
Refrigerate and serve:
Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours. Garnish with some icing sugar and crushed pistachios before serving.
