These Crispy Ground Beef Tortillas are a quick and easy meal or snack. They are packed with flavor and perfect for a busy weeknight.

Ingredients:
- ½ Onion (75g), chopped
- 3 cloves Garlic (6g), minced
- 7 ounces (200g) Ground beef
- Salt and black pepper to taste
- Pinch of paprika
- 1 tablespoon (15ml) Olive oil
- 1 tablespoon (10g) Parsley, chopped
- 2 Tortillas (approx. 100g each)
- Sliced Mozzarella cheese (amount to taste)
Instructions:
- Cook the Ground Beef: Heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic and cook until softened, about 5 minutes.
- Add Ground Beef: Add ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Season with salt, black pepper, and paprika.
- Combine with Parsley: Once the beef is cooked, stir in chopped parsley.
- Assemble Tortillas: Place one tortilla on a plate. Top with a generous amount of the cooked ground beef mixture.
- Add Cheese: Top with sliced mozzarella cheese.
- Fold and Cook: Place the second tortilla on top to create a closed tortilla.
- Cook: Heat a lightly oiled griddle or skillet over medium heat. Cook the folded tortilla for 2-3 minutes per side, or until the cheese is melted and the tortilla is golden brown and crispy.
- Serve: Cut the cooked tortilla in half and serve immediately.
