These Crispy Ground Beef Tortillas are a quick and easy meal or snack. They are packed with flavor and perfect for a busy weeknight.

Ingredients:

  • ½ Onion (75g), chopped
  • 3 cloves Garlic (6g), minced
  • 7 ounces (200g) Ground beef
  • Salt and black pepper to taste
  • Pinch of paprika
  • 1 tablespoon (15ml) Olive oil
  • 1 tablespoon (10g) Parsley, chopped
  • 2 Tortillas (approx. 100g each)
  • Sliced Mozzarella cheese (amount to taste)

Instructions:

  • Cook the Ground Beef: Heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic and cook until softened, about 5 minutes.
  • Add Ground Beef: Add ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Season with salt, black pepper, and paprika.
  • Combine with Parsley: Once the beef is cooked, stir in chopped parsley.
  • Assemble Tortillas: Place one tortilla on a plate. Top with a generous amount of the cooked ground beef mixture.
  • Add Cheese: Top with sliced mozzarella cheese.
  • Fold and Cook: Place the second tortilla on top to create a closed tortilla.
  • Cook: Heat a lightly oiled griddle or skillet over medium heat. Cook the folded tortilla for 2-3 minutes per side, or until the cheese is melted and the tortilla is golden brown and crispy.
  • Serve: Cut the cooked tortilla in half and serve immediately.
