Ingredients

  • 1 unbaked pie crust
  • 6 tablespoons unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 3 large eggs
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon fine sea salt
  • 1 cup buttermilk
  • 1 1/2 teaspoons vanilla extract
  • 1–2 teaspoons lemon juice (optional)

Optional Toppings:

  • Whipped cream

Directions

1. Prepare the Pie Crust:

  • Preheat the oven to 350°F (175°C).
  • Place the unbaked pie crust into a 9- to 10-inch deep pie dish. Decorate the edges as desired and place the pie dish on a baking sheet.

2. Cream Butter and Sugar:

  • In a large bowl, beat the softened butter and sugar together using an electric mixer on medium speed until creamy and smooth.
  • Add the eggs one at a time, mixing well after each addition.

3. Add Dry Ingredients and Buttermilk:

  • On low speed, mix in the flour and salt until just combined.
  • Add the buttermilk and vanilla extract, and mix until smooth. If using lemon juice, stir it in at this point.

4. Assemble the Pie:

  • Carefully pour the filling into the prepared pie crust.
