Ingredients

For the Potato Mixture:

  • Potatoes: 5-6 medium, peeled and boiled until soft
  • Provencal Herbs: 1 tablespoon (dry)
  • Sweet Paprika Powder: 1 tablespoon
  • Flour: 5 tablespoons
  • Salt: To taste

For the Filling:

  • Green Herbs (Parsley, Dill, or Chives): 1 bunch, finely chopped
  • Garlic: 2 cloves, minced
  • Mozzarella Cheese: 70 g, grated
  • Salt: To taste
  • Butter: 80 g, softened

For the Coating:

  • Eggs: 2, beaten
  • Salt and Pepper: To taste
  • Milk: 90 g
  • Flour: 120 g
  • Breadcrumbs: As needed

Directions

Step 1: Prepare the Potato Mixture

  1. Boil the potatoes until soft. Drain and mash them until smooth.
  2. Add Provencal herbs, paprika powder, flour, and salt to the mashed potatoes. Mix until well combined and pliable. Set aside.

Step 2: Prepare the Filling

  1. In a small bowl, mix the chopped green herbs, minced garlic, grated mozzarella, softened butter, and a pinch of salt.
  2. Divide the filling into small portions (about 1 teaspoon each) and set aside.

Step 3: Shape the Potato Balls

  1. Take a small portion of the potato mixture and flatten it in your hand to form a disc.
  2. Place a portion of the filling in the center and gently shape the potato mixture around it to form a ball, ensuring the filling is sealed inside.
  3. Repeat with the remaining potato mixture and filling.
