Instructions
1. Prepare the Crust:
Preheat your oven to 325°F (160°C).
Mix crushed cookies with melted butter until combined.
Press the mixture into the bottom of a springform pan, creating an even layer.
Bake for 10 minutes, then set aside to cool.
2. Make the Cheesecake Filling:
In a large bowl, beat cream cheese and sugar until smooth.
Add vanilla extract and eggs one at a time, mixing well after each addition.
Blend in sour cream and heavy cream until smooth and creamy.
Pour the filling over the cooled crust.
3. Bake the Cheesecake:
Wrap the springform pan in foil and place it in a larger baking dish.
Pour hot water into the dish, creating a water bath.
Bake for 60–70 minutes, or until the center is set but slightly jiggly.
Turn off the oven and crack the door, letting the cheesecake cool gradually for 1 hour.
Chill in the fridge for at least 4 hours or overnight.
