Crust:
2 cups crushed chocolate sandwich cookies (like Oreos)
5 tbsp melted butter
Cheesecake Filling:
24 oz (3 blocks) cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
1/3 cup sour cream
1/3 cup heavy cream
Topping:
2 cups shredded sweetened coconut, toasted
1 cup caramel sauce (store-bought or homemade)
1/2 cup semi-sweet chocolate chips, melted
2 tbsp heavy cream (to thin chocolate, optional)

Instructions
1. Prepare the Crust:
Preheat your oven to 325°F (160°C).
Mix crushed cookies with melted butter until combined.
Press the mixture into the bottom of a springform pan, creating an even layer.
Bake for 10 minutes, then set aside to cool.
2. Make the Cheesecake Filling:
In a large bowl, beat cream cheese and sugar until smooth.
