    Directions
    1. Preheat the Oven:
    Preheat your oven to 350Β°F (175Β°C). Line a jelly roll pan with parchment paper.

    2. Prepare the Egg Mixture:
    In a large bowl, beat the egg yolks with 1/2 cup of granulated sugar until the mixture is light in color. Stir in the mashed bananas and 1 tsp of vanilla extract.

    3. Whip the Egg Whites:
    In a separate bowl, whisk the egg whites to soft peaks. Gradually add the remaining 1/4 cup of granulated sugar while continuing to beat until stiff peaks form.

    4. Combine Dry Ingredients:
    In another bowl, sift together the flour, baking powder, and salt. Gently fold this mixture into the egg yolk mixture, followed by folding in the whipped egg whites.

    5. Bake the Sponge:
    Spread the batter evenly in the prepared jelly roll pan. Bake for 12-15 minutes or until the sponge is lightly golden.

    6. Roll the Sponge:
    As soon as it’s done baking, turn the sponge out onto a clean kitchen towel dusted with powdered sugar. Roll up the sponge with the towel inside and let it cool completely.

    In a saucepan over medium heat, combine the brown sugar, 1/2 cup of heavy cream, butter, vanilla extract, and a pinch of salt. Bring to a boil while stirring constantly until the sauce thickens.

    10. Finish the Roulade:
    Drizzle the caramel sauce over the rolled sponge. Garnish with crushed graham crackers, additional banana slices, and a dusting of powdered sugar.
