Ingredients:
1 pound sliced smoked sausage
3 cups chicken broth and 4 cups water
1 diced green bell pepper
1 pound dried red beans
1.5 tablespoons Creole seasoning
1 diced onion
3 cloves minced garlic
Cooked rice, for serving
Instructions:
1. Rinse and drain the dried red beans.
2. In the slow cooker, combine the red beans, sliced smoked sausage, diced green pepper, diced onion, Creole seasoning, minced garlic, water, and chicken broth.
3. Stir to mix everything evenly.
4. Cover the slow cooker and cook on high for 6 hours or until the beans are tender. Use a potato masher to break up some of your beans and continue cooking for 1 additional hour.
Serve the cooked red beans and sausage mixture over cooked rice.
