Vanilla Sugar Cookies

Ingredients

  • Eggs: 2 large
  • Powdered sugar: 100 g (½ cup)
  • Vanilla sugar: 10 g (1 tablespoon)
  • Vegetable oil: 100 g (½ cup)
  • Baking powder: 7 g (1½ teaspoons)
  • Cornstarch: 50 g (⅓ cup)
  • Flour: 300 g (2½ cups)
  • Salt: A pinch

Directions

  • Prepare the Dough:
    1. In a mixing bowl, whisk the eggs with powdered sugar and vanilla sugar until light and fluffy.
    2. Add vegetable oil and mix until well combined.
    3. Sift in the flour, cornstarch, baking powder, and a pinch of salt.
    4. Mix until a soft dough forms. If the dough is too sticky, add a little more flour, 1 tablespoon at a time.
  • Shape the Cookies:
    1. Preheat your oven to 180°C (350°F).
    2. Line a baking sheet with parchment paper.
    3. Roll the dough into small balls (about 1 tablespoon each) and place them on the prepared baking sheet, leaving some space between each cookie.
    4. Flatten each ball slightly with the back of a fork or your palm.
  • Bake the Cookies:
    1. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
    2. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
