Twisted Puff Pastry Buns with the Companion

Ingredients :
450 g of flour
60g of sugar
10 g of dry yeast
100 ml of warm milk
2 eggs
200 g Butter
1 pinch of salt
1 egg yolk (for gold)
Preparation (with companion or by hand):
To the Companion:
In a bowl, add flour, yeast, sugar, eggs and warm milk. Run the “dough” program for 2 minutes. Then add the salt and butter in pieces. Keep farting for 5 minutes. Let dough rise for 1 hour.

On hand:
Mix the ingredients and simmer for about 10 minutes. Let dough rest for 1 hour.
Lower the dough into a rectangle, spread the butter, fold the dough and form twists. Arrange them on a baking sheet and let rise for 30 minutes.
Brown the buns with an egg yolk and bake at 180°C for 20-25 minutes.
