Just thinking about the combination of pineapple’s sweet and sour scent with the succulent pork is enough to have anyone’s taste buds salivating. Indulge in the mouthwatering slow cooker pineapple pork and prepare to be whisked away to a tropical paradise without ever leaving your house. Envision yourself enjoying this delicious dish while basking in the sun on a tropical beach, listening to the soft sound of the wind through the palm palms.
To celebrate the conclusion of a long and stressful year, my friends and I went on a beach break last summer. We needed a break, some excitement, and delicious cuisine badly. Under a thatched-roof patio that overlooked the ocean, we sat at a primitive wooden table one evening as the sun was sinking. Our appetites were aroused by the enticing aroma of pineapple and slow-cooked pork that drifted through the air. We devoured our generous helpings of pineapple glaze-drenched, succulent pork with great anticipation. We were whisked away to culinary heaven with the very first mouthful, thanks to the wonderful harmony of tastes. Ever since then, this dish has been our most treasured beach vacation ritual, bringing back happy memories with each taste.

    1. In a big skillet, heat the olive oil over medium heat. Toss in the pork roast and brown it by searing it on both sides. The liquids and tastes will be better preserved this way.
After browning the pork roast, place it in a slow cooker. Gently place the sliced onion on top of the roast. (Alternatively, frying the onions before adding them is another option).
    3. Combine the apple cider vinegar, soy sauce, honey, dark brown sugar, salt, ground garlic cloves, and crushed red pepper flakes (if using) in a mixing bowl. Stir until a marinade is formed.
    4. Place the pork roast and onions in the slow cooker with the marinade. Apply the marinade generously to the roast.
    5. Evenly distribute the chopped fresh pineapple pieces around the roast in the slow cooker.
    6. Preheat the slow cooker to low heat and cook the pork for 6-8 hours, or high heat for 4-5 hours, until it reaches tenderness. Cover and simmer.
    7. If desired, thicken the gravy sauce even more by making a cornstarch slurry and adding it to the slow cooker.

At this point, you have the option of serving it shredded (and using it to create sandwiches) or plain with a rich gravy sauce.
Then why put off enjoying the tropical taste symphony till you’re on vacation? This Slow Cooker Pineapple Pork dish is like a little slice of heaven in a pan. Save it and give it a try.
