Teriyaki Steak Bites

Ingredients:
1 lb beef sirloin or tenderloin, cut into 1-inch cubes
1 green bell pepper, cut into slices
1 medium onion, sliced
1/4 cup soy sauce
2 tablespoons honey or brown sugar
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 tablespoon cornstarch
2 tablespoons water
Salt and pepper, to taste
2 tablespoons vegetable oil
Instructions:
Marinate the Steak: In a bowl, mix soy sauce, honey (or brown sugar), garlic, and ginger. Add the steak bites and marinate for at least 30 minutes, or up to 2 hours for more flavor.
Prepare Vegetables: While the steak is marinating, cut the green bell pepper and onion into bite-size pieces.
Cook the Steak: Heat a tablespoon of vegetable oil in a large skillet over medium-high heat. Remove the steak from the marinade (keep the marinade) and cook it in the skillet until it’s browned and cooked to your preference. Remove the steak from the skillet and set it aside.
Cook the Vegetables: In the same skillet, add the remaining tablespoon of oil if needed, then add the bell pepper and onion. Cook until they are tender but still crisp.
Make the Teriyaki Sauce: While the vegetables are cooking, mix the cornstarch with water in a small bowl. Pour the reserved marinade into the skillet, add the cornstarch mixture, and bring to a simmer. Cook until the sauce thickens.
Combine: Return the cooked steak bites to the skillet with the vegetables and sauce. Stir to combine everything and heat through. Season with salt and pepper to taste.
