Prepare the Nuts and Seeds:
Place a frying pan over medium heat. Add the pumpkin seeds and toast them, stirring frequently, until they are lightly golden. Remove from the pan and set aside.
In the same pan, add the walnuts and roast them until they are fragrant and slightly browned. Once done, remove from the pan and let them cool. Once cooled, chop the walnuts into smaller pieces.
Prepare the Fruits:
While the nuts are cooling, place the dates in a bowl of water to soak for 15 minutes. After soaking, drain the water and remove the stones from the dates.
Place the dried apricots in a blender or food processor and pulse until they are finely chopped.
Mix Ingredients:
In a large mixing bowl, combine the toasted pumpkin seeds, chopped walnuts, processed dates, ground apricots, and orange zest. Mix thoroughly until the mixture is well combined and starts to stick together.
Form the Dessert:
Take the mixture and form it into a cylinder shape. This can be done by rolling it on a clean surface until it forms a tight log.
Coat with Sesame Seeds:
Toast the sesame seeds in the same frying pan over medium heat until golden. Roll the prepared cylinder in the toasted sesame seeds, ensuring it’s fully coated.
Freeze:
Place the coated cylinder in the freezer for about 2 hours to firm up.
Serve:
Once firm, remove from the freezer, slice into desired thickness, and enjoy!
