Strawberry Cheesecake Eggroll Bites 🍓🍰

Beat the softened cream cheese in a bowl until smooth.
Add powdered sugar and vanilla extract, and beat until combined.
Gradually add heavy cream (or whipped topping) and continue beating until light and fluffy.
Stir in the strawberry jam or chopped strawberries.
Assemble the Eggrolls:
Lay an eggroll wrapper flat and spoon 1-2 tablespoons of the cheesecake filling into the center.
Fold the sides inward and roll tightly, sealing the edges with a little water. Repeat with the remaining wrappers and filling.
Fry the Eggrolls:
Heat vegetable oil in a deep skillet or frying pan over medium-high heat, enough to submerge the eggrolls halfway.
Fry the eggrolls in batches for 2-3 minutes per side until golden brown and crispy.
Remove with a slotted spoon and drain on paper towels.
Serve and Enjoy:
Dust with powdered sugar (optional) and serve with extra strawberry jam or whipped cream for dipping.
