Southern Squash Casserole

Ingredients:
3 pounds of yellow squash, sliced
1/2 cup of diced onion (optional)
1 can (10.5 oz) of cream of mushroom or cream of chicken soup
1 large egg
1 cup of mayonnaise
8 ounces of shredded cheddar cheese
Salt and pepper to taste
Topping:
1 stick of melted butter
2 sleeves of crushed Ritz crackers
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a mixing bowl, combine diced onion, soup, mayonnaise, egg, shredded cheddar cheese, salt, and black pepper. Mix well.
3. Pour over sliced squash until everything is combined and mixed well. Pour this mixture into greased casserole dish.
4. Crush Ritz crackers in a zip loc bag with a rolling pin to avoid any messes. Mix this topping with melted butter. Sprinkle topping on casserole dish. Sprinkle topping on casserole dish.
5. Cover with tin foil and bake in the preheated oven for 30 minutes or so. Then uncover and bake for 10 more minutes, or until top is golden and brown.
