Southern Lima Beans Recipe:
Ingredients:
1 pound dried lima beans
1 smoked ham hock
9 cups water
Salt and pepper to taste

Stove Top Instructions:
1. Rinse the dried lima beans thoroughly under cold water and remove any debris or stones.
2. In a large pot, combine the rinsed lima beans, smoked ham hock, and 9 cups of water. Season with salt.
3. Bring the mixture to a boil over high heat.
4. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 2 to 2.5 hours or until the beans are tender. Stir occasionally and add more water if needed to keep the beans submerged.
5. Check the seasoning and add salt and pepper to taste. The ham hock will provide some saltiness, so be cautious not to over-salt.
6. Remove the ham hock from the pot, shred the meat from the bone, and return the meat to the beans.
Slow Cooker Instructions
1. Combine beans, water, ham hock, salt, and pepper in a 6-quart slow cooker.
2. Cook on high for 5 hours (or low for 7-8 hours) until beans are tender.
3. Stir occasionally, adjust seasoning, and add hot water if needed to keep beans covered.
4. Optionally, remove hock, shred meat, and return to the cooker.
Serve the Southern Lima Beans hot as a side dish or as a main course. Enjoy!
