4 bone-in pork chops
1 cup flour
1 tsp. salt
1 tsp. black pepper
1 tsp. garlic powder
cayenne pepper, to taste
1/2 cup vegetable oil
2 tbsp. butter
Directions:
Season the pork chops with a pinch of salt and pepper on each side.
Combine the flour, the remaining salt and pepper, the garlic powder, and the cayenne in a dish.
Heat the vegetable oil in a cast-iron skillet over medium heat. When the oil is hot, add the butter.
Dredge the chops in the flour mixture until well coated on all sides and place directly into the pan as soon as the butter stops foaming. Cook in batches if needed.
Cook the pork chops for about five minutes on one side, then use a spatula to carefully flip them. Cook them for four minutes on the other side, then remove to a plate. Serve hot.
