Instructions:
1. Combine the cornmeal, self-rising flour, low-fat buttermilk, and large egg in a bowl. Thoroughly mix the ingredients until they are well incorporated. The mixture should have a moist consistency without being overly thin.
2. Heat a skillet with oil. You can use approximately 3 tablespoons of coconut oil or your preferred cooking oil.
3. Spoon dollops of the batter into the hot oil, taking care not to overcrowd the skillet. This cooking method resembles that of traditional pancakes.
4. Fry the fritters until one side turns golden brown, then flip them over to brown the other side.
5. Once the fritters are cooked to a crispy perfection, transfer them to a plate lined with paper towels. Absorb any excess oil by gently pressing the fritters with the paper towels.
