Smothered Beef & Bean Burrito Bake:

Ingredients:
– 2 pounds ground beef
– 1 diced onion
– 2 minced garlic cloves
– 1 can (15 oz) refried beans
– 20 ounces enchilada sauce
– 1 teaspoon each cumin, oregano
– Salt and pepper to taste
– 1 packet taco seasoning
– 6 large flour tortillas
– 1 pound shredded cheese
Instructions:
1. Preheat your oven to 375°F (190°C). Grease a 9×13 baking dish with cooking spray.
2. In a large skillet, cook the ground beef over medium heat until browned and no longer pink. Drain any excess fat.
3. Add the diced onion and minced garlic to the skillet with the cooked beef. Sauté until the onion is translucent and fragrant.
4. Stir in the refried beans, taco seasoning, remaining spices, salt, and pepper. Mix well and let the mixture simmer for about 5 minutes. Add 1 cup of shredded cheese to this mixture.
5. Place a tortilla on a flat surface and spoon about 1/6 of the beef and bean mixture onto the center of the tortilla. Roll it up tightly and place it seam side down in the prepared baking dish. Repeat with the remaining tortillas and beef and bean mixture.
6. Pour 5 ounces of enchilada sauce in baking dish. Layer tortillas in baking dish. Pour remaining enchilada sauce on top. Sprinkle remaining cheese on top.
7. Cover the baking dish with aluminum foil and bake for 40 minutes.
Once baked, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh cilantro.
