Seafood Bake for Two
Ingredients:
1/2 lb shrimp, peeled and deveined
1/2 lb scallops
1/2 lb crab meat (or imitation crab)
1 cup cherry tomatoes, halved
1/2 cup fresh spinach, chopped
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 tbsp butter, melted
2 cloves garlic, minced
1 tsp dried oregano
1/2 tsp dried thyme
Salt and pepper, to taste
Lemon wedges (for garnish)

Preheat your oven to 375°F (190°C).
In a bowl, combine the shrimp, scallops, and crab meat. Season with salt, pepper, dried oregano, and dried thyme.
In a separate bowl, mix the breadcrumbs, Parmesan cheese, melted butter, and minced garlic.
Add the cherry tomatoes and spinach to the seafood mixture and stir gently to combine.
Transfer the seafood and vegetable mixture to a small baking dish (or divide between two individual dishes).
Sprinkle the breadcrumb mixture evenly over the top.
Bake in the preheated oven for 15-20 minutes, or until the seafood is cooked through and the topping is golden brown.
Garnish with lemon wedges before serving.
