Salted Caramel Cracker Bites

    You’ll start by spreading out the oyster crackers on a baking sheet lined with parchment paper. In a pinch, you could just grease the baking sheet, but they come off the pan a whole lot easier with the parchment! You will then want to melt two sticks of butter in a saucepan to start the caramel. Add in the sugar, vanilla, and cinnamon and get that mixture bubbling! No candy thermometer needed for this recipe, but you’ll want to keep a close eye on things and continuously stir to make sure the caramel doesn’t burn.

    INGREDIENTS
    • 1 9oz package oyster crackers
    • 1 cup butter (2 sticks)
    • 1 cup brown sugar
    • 2 teaspoons vanilla extract
    • ½ teaspoon cinnamon
    • 1 teaspoon salt
    PREPARATION
    1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
    2. Pour crackers onto parchment paper and spread into an even layer.
    3. In a medium saucepan, melt butter over medium heat and then stir in the brown sugar, vanilla, and cinnamon until dissolved.
    4. Bring the mixture to a boil while continuously stirring. Continue cooking the bubbling mixture for 2-3 minutes until it thickens and lightens in color.
    5. Remove from heat and immediately pour over crackers. Fold the caramel into the crackers until evenly coated. Top with salt.
    6. Bake for 7-9 minutes, watching that the caramel doesn’t burn.
    7. Allow crackers to cool then break them into small clusters. Store in an airtight container.
