Cut the potatoes in half and transfer them to the pan with the water.
Season with salt, and when the water boils, boil for 15 minutes, then remove from the heat.
Pour the olive oil into the pan and transfer to the oven for 10 minutes to heat the oil.
Pour the potatoes into the pan with the hot oil and cover each potato with the oil. Transfer to the oven and cook at 190°C/392°F for 20 minutes.
In a saucepan, add the butter, garlic and chopped sage. Sauté for a few minutes then remove from the heat.
Pour the butter mixture over the potatoes in the pan and add the few sage leaves. Transfer to the oven and cook at 190°C/392°F for a further 10 minutes until golden brown.
