Recipe: The South’s Best Pralines

Ingredients:
3 tablespoons dark corn syrup
1 teaspoon pure vanilla extract
1 1/2 cups packed light brown sugar
1 cup evaporated milk
1 1/2 cups pecan halves
1/8 teaspoon salt
1 1/2 cups sugar
2 tablespoons butter
Instructions:
1. Combine the dark corn syrup, packed light brown sugar, evaporated milk and salt in a large saucepan.
2. Stirring continuously, bring the mixture to a boil over medium-high heat.
3. Once it reaches a boil, reduce the heat to medium and cook, continuing to stir, until the mixture reaches the soft-ball stage (around 236-240°F or 113-116°C on a candy thermometer).
4. Remove the saucepan from the heat and stir in the sugar and butter until fully combined.
5. Allow the mixture to cool for 6-9 minutes. Add pecan halves and vanilla by hand and stir for a few mins by hand.
6. Using a spoon, drop portions of the mixture onto wax paper or a silicone baking mat to form pralines. Leave space between each one to allow them to set. Add hot water if the mixture gets too tough.
7. Let the pralines cool and harden for about 30 minutes before serving.

Notes:
– It is important to stir the mixture continuously while boiling to prevent scorching or burning.
– Be cautious when working with the praline mixture, as it will be extremely hot.
