Recipe: Southern Tomato Gravy

Ingredients:
4 medium diced ripe tomatoes or 15 ounces diced tomatoes from can
4 tablespoons bacon grease or vegetable oil
3 tablespoons all-purpose flour
1 cup whole milk
1/2 cup water
1/4 teaspoon garlic powder
Salt and pepper to taste
Instructions:
1. Gently mash diced tomatoes so juices release (you may need to add 1/4 cup water) if not using from can.
2. In a skillet, heat the bacon grease or vegetable oil over medium heat.
3. Stir in flour and whisk until it turns light brown. This should take 2 mins or os.
4. Add 1/2 cup of water and stir until smooth. This will thicken up.
5. Quickly add tomatoes with all the juice and break them up with a spoon.
6. Add salt, pepper, and garlic powder, and stir.
7. Gradually pour in milk while stirring.
8. Reduce heat, simmer for 8 minutes or until desired thickness. Adjust consistency with more milk or water if needed. Once the gravy reaches your desired consistency, remove it from heat.
Serve the Southern Tomato Gravy hot over biscuits, fried chicken, or any other dish of your choice. Enjoy!
