Ingredients:
– 4 bone-in, skin-on chicken thighs
– Salt and pepper, to taste
– 2 tablespoons vegetable oil
– 1 medium onion, sliced
– 2 cloves garlic, minced
– 2 tablespoons all-purpose flour
– 2 cups chicken broth
– 1 teaspoon paprika
– 1 teaspoon dried thyme
– 1 bay leaf
– Chopped parsley for garnish (optional)
Instructions:
1. Season the chicken thighs generously with salt and pepper.
2. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken thighs, skin-side down, and cook until they’re golden brown, about 6-7 minutes on each side. Remove the chicken and set aside.
3. In the same skillet, add the sliced onion and cook until they’re soft and translucent, about 3 minutes. Add the minced garlic and cook for another 1 minute, until aromatic.
4. Sprinkle the all-purpose flour over the onions and garlic. Stir and cook for 2 minutes to create a roux. This will help thicken the gravy.
5. Gradually whisk in the chicken broth, ensuring that there are no lumps. Add in paprika, dried thyme, and the bay leaf. Bring the mixture to a boil, then reduce to a simmer.
6. Return the chicken thighs to the skillet, cover, and let simmer for 25-30 minutes or until the chicken is cooked through and the gravy has thickened.
7. Remove the bay leaf, check for seasoning, and adjust with more salt and pepper if needed.
