Pupusas de Queso Recipe
Ingredients:
For the Dough:
- 2 cups masa harina (corn flour)
- 1 1/2 cups warm water
- 1/2 teaspoon salt
For the Filling:
- 1 1/2 cups cheese (queso fresco, mozzarella, or a blend)
- Optional: 1/2 cup refried beans (for additional filling)
Instructions:
- Prepare the Dough:
- In a large bowl, mix the masa harina and salt. Gradually add the warm water, mixing until a soft dough forms. If the dough is too dry, add a little more water; if too wet, add a bit more masa harina.
- Divide the Dough:
- Divide the dough into 8-10 equal balls (about the size of a golf ball).
- Prepare the Filling:
- If using beans, mash them slightly. Mix the cheese with the beans (if using) to combine.
- Form the Pupusas:
- Take a dough ball and flatten it into a disc about 1/2 inch thick. Place a tablespoon of the cheese mixture in the center, then carefully fold the edges over the filling to seal it. Gently flatten it again to form a thick tortilla. Repeat with the remaining dough and filling.
- Cook the Pupusas:
- Heat a skillet or griddle over medium heat. Cook each pupusa for about 3-5 minutes on each side, or until golden brown and slightly crispy.
- Serve:
- Serve the pupusas hot with curtido (a pickled cabbage slaw) and salsa roja (a tomato-based sauce) on the side.
Tips:
- You can adjust the cheese type to your liking. Queso fresco is traditional, but mozzarella gives a nice melty texture.
- Make sure to keep the dough covered with a damp cloth to prevent it from drying out while you work.
