- Peel and mash the cooked potatoes.
- Mix mashed potatoes with salt, pepper, nutmeg, egg yolks and parmesan.
- Cut the cheese into rectangles.
Take a few spoonfuls of mashed potatoes and form a patty, wrap it around the cheese making sure it is completely covered. - Whisk 2 eggs and cover each potato fritter with egg and breadcrumbs.
- Fry for 6-7 minutes or until evenly browned.
