Poor Man’s Prime Rib
Ingredients
1 (3 to 4 pound) chuck roast
2 tablespoons olive oil
2 teaspoons kosher salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
2 cups beef broth
2 tablespoons Worcestershire sauce

Directions
Preheat your oven to 275°F (135°C).
In a small bowl, mix together the salt, pepper, garlic powder, onion powder, thyme, and rosemary.
Rub the chuck roast all over with the olive oil followed by the seasoning mix, ensuring it is well-coated.
Place the roast in a roasting pan and add the beef broth and Worcestershire sauce to the bottom of the pan.
Cover the pan tightly with aluminum foil or a lid.
Roast in the preheated oven for about 4 to 5 hours, or until the meat is fork-tender.
Remove the roast from the oven and let it rest for at least 20 minutes before slicing against the grain to serve.
