Peach-Pecan Cobbler

Simpler than a pie, denser than a crisp, a cobbler is a dessert favorite for a reason – and contrary to some other recipes, the recipe below couldn’t be easier to make. Canned peaches are topped with canned biscuits for a dessert that has all the flavor of homemade at a fraction of the effort, thanks to a little bit of doctoring with sugar and spices.
The flavor combination in this cobbler is Southern to the max: peaches play with pecans, cinnamon, and a hint of bourbon. A cinnamon-sugar topping on the golden brown biscuit topping brings out all of those rich flavors for a summery dessert that can be made any time of year.

    Ingredients
3 (29-ounce) cans peaches in light syrup
1 stick plus 1 tablespoon melted butter, divided
    ½ cup light brown sugar
    1 tablespoon bourbon
1 ½ teaspoons ground cinnamon, divided
    ½ teaspoon ground ginger
    ½ cup chopped pecans
    1 ½ tablespoons cornstarch
    2 (1-pound) cans prepared biscuits
    2 tablespoons sugar
    1 teaspoon cinnamon
    Directions
    1. Preheat the oven to 350 F. Drain two of the cans of peaches and combine in a bowl with the third can, undrained. Add the stick of melted butter, sugar, spices, and pecans, reserving ½ teaspoon cinnamon for the topping. Mix to combine.
    2. In a small bowl, whisk the cornstarch with 2 tablespoons of the liquid from the peaches until fully combined. Add to the bowl of filling, and stir well to combine.
