Neapolitan recipe for marinated anchovies

    Ingredients:
    – 800 grams of anchovies 🐟
    – ½ liter of white wine or lemon vinegar 🍋
    – Extra virgin olive oil 🫒
    – Salt 🧂
    – Chili pepper 🌶️
    – Garlic 🧄
    – Fresh chopped parsley or mint 🌿

    Procedure:
    1. Preparation of the anchovies:

    – Scale the anchovies, remove the head, bones and entrails. Wash and dry carefully. 🐟🧼

    – Place the anchovies in a ceramic dish, sprinkle with vinegar or lemon and marinate for at least 12 hours.

    – Drain the anchovies in a colander until the excess acidic liquid is removed, then drain them gently. 🥣🧻

    4. Season:
    – Season the anchovies with extra virgin olive oil, salt, garlic, chopped fresh parsley or mint and chilli. 🫒🧂🧄🌿🌶️

    5. Serve:
