Mini Meatloaf Muffins with Mashed Potato Frosting

    Miniature versions of anything are more delicious! The same holds true with meatloaf. No child, no matter how big or young, can resist these adorable meatloaf cupcakes. They take just 20 minutes to bake, which is far less than the hour it takes for regular meat loaves. Though I usually simply heap the mashed potatoes on top and fluff them with a fork—much quicker—I piped them on for the shot.

    Smash Potato Frosting on Mini Meatloaf Muffins

    List of Meatloaf Ingredients:
    1 pound of ground meat
    1⁄2 a cup of breadcrumbs
    ketchup, 1/4 cup
    A quarter cup of milk
    1 thinly sliced tiny onion
    One egg
    a pinch of Worcestershire sauce
    0.5 milligrams of garlic powder

    Garnish with salt and pepper as desired.
    Regarding the Corn “Frosting”:
    Peel and dice four big potatoes.
    A quarter cup of milk
    20 milliliters of butter
    Garnish with salt and pepper as desired.
    Add some fresh parsley or chives for a garnish.

    Set oven temperature to 375°F, or 190°C. Oil a muffin pan.

    All of the meatloaf ingredients should be well mixed in a big basin.

    Fill up all of the muffin pan cups with the meatloaf mixture. Press down firmly.

    Cook the meatloaf in the oven for 20 to 25 minutes, or until browned on top.

    Boil the potatoes in salted water until they are soft, which should take around 15-20 minutes while the meatloaf bakes.

    After the potatoes are drained, combine them with the milk, butter, salt, and pepper, and Mash to a creamy consistency.

    Wait for the meatloaf cupcakes to cool for a while before removing them from the pan.

    Top each meatloaf cupcake with mashed potato “frosting” using a pipette or a spoon.

    Before serving, garnish with fresh parsley or chives.
