    Here’s a simple recipe for Mexican White Trash Casserole that serves 6-8 people:
    Ingredients
    – 1 (16 ounce) container of cream cheese, softened
    – 1 cup of sour cream
    – 1 can (16 ounce) of refried beans
    – 1 cup of shredded cheddar cheese (divided)
    – 1 cup of shredded Monterey Jack cheese (divided)
    – 1 can (4 ounce) of diced green chilies
    – 1/2 cup of diced cooked chicken (optional)
    – 1/2 cup of diced onion
    – 1/2 cup of diced bell pepper
    – 1 packet of taco seasoning
    – 1 bag of tortilla chips, crushed
    – Salsa, sour cream, and diced tomatoes for toppings (optional)

    1. Preheat oven to 350°F (175°C).
    2. In a large mixing bowl, combine the softened cream cheese and sour cream. Mix until smooth.
    3. Add the refried beans, diced green chilies, taco seasoning, and 1/2 cup of shredded cheddar cheese to the bowl. Mix until well combined.
    4. If using cooked chicken, onion, and bell pepper, stir them in at this point.
    5. Transfer the mixture to a 9×13-inch baking dish.
    6. Top the mixture with the remaining 1/2 cup of shredded cheddar cheese and 1/2 cup of shredded Monterey Jack cheese.
    7. Sprinkle the crushed tortilla chips on top of the cheese.

    8. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
    9. Remove from the oven and let it cool for a few minutes before serving.
