- 6 ears of fresh sweet corn
- 6 tablespoons mayonnaise
- 1 teaspoon garlic powder
- 1 cup crumbled cotija cheese
- 6 tablespoons fresh cilantro, coarsely chopped
- 1 teaspoon chili powder
- 2 limes (or square lemons)
- Preheat the oven to 350°F (176°C). Place the corn directly on the oven rack and bake for about 36-41 minutes, until tender.
- While the corn is cooking, mix the garlic powder and mayonnaise in a small bowl.
- Once the corn is cooked, brush it with the garlic mayonnaise, then roll it in the crumbled cotija cheese.
- Sprinkle the corn with chopped cilantro and chili powder.
- Squeeze fresh lime juice over the top, if desired.
