Ingredients:
1 lb ground beef (or turkey)
1 medium onion, diced
3 cloves garlic, minced
2-3 medium potatoes, diced
2 medium carrots, diced
1 green bell pepper, diced
1-2 fresh green chiles (e.g., poblano or jalapeño), chopped
1 cup vegetable or chicken broth
1 can (14 oz) diced tomatoes (optional)
1 teaspoon ground cumin
1 teaspoon oregano
Salt and pepper to taste
2 tablespoons olive oil
Fresh cilantro for garnish
Instructions:
1. Sauté the Meat:
In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent.
Add the ground beef (or turkey) to the pot. Cook until browned, breaking it apart with a spoon.
2. Add the Vegetables:
Stir in the diced potatoes, carrots, green bell pepper, and green chiles. Cook for about 5 minutes, allowing the vegetables to soften slightly.
3. Season and Simmer:
Add the diced tomatoes (if using), vegetable or chicken broth, cumin, oregano, salt, and pepper. Stir to combine.
Bring the mixture to a simmer, cover, and cook for about 20-25 minutes, or until the potatoes and carrots are tender.
4. Serve:
Once cooked, taste and adjust the seasoning if needed. Garnish with fresh cilantro before serving.
