Marshmallow Yule Log
This Marshmallow Yule Log is a delightful retro Christmas treat, combining the goodness of chocolate, walnuts, and colorful marshmallows!
Ingredients:
1/2 cup salted butter
2 cups semisweet chocolate chips
1 cup chopped walnuts
5 1/2 cups (10.5-ounce package) rainbow-colored miniature marshmallows
1 cup flaked coconut
Instructions:
In a saucepan, melt the butter and chocolate chips over low heat. Let the mixture cool slightly to prevent the marshmallows from melting when added.
Stir in the walnuts and marshmallows. Allow the mixture to cool.

Spread the flaked coconut on a sheet of waxed paper. Divide the cooled mixture into two equal portions and shape each portion into a long roll.
Roll each log in the coconut, using the waxed paper to help roll them back and forth, as the mixture can be sticky.
Wrap each log in waxed paper, then wrap again in plastic wrap. Refrigerate overnight or longer.
When ready to serve, defrost the logs and cut them into slices about 1/3 inch thick. Enjoy!
