What You Need:
“Yellow Cake Mix” (1) packet
one 3.5-oz container of quick lemon pudding
four eggs
1/4 cup of canola or vegetable oil
Glaze
4 cups of sugar, powdered
one eighth cup of freshly squeezed lemon juice
Zest from one lemon, grated
Canola or vegetable oil, 3 tablespoons
three tablespoons water

Heat the oven to 350 degrees. Lightly coat a mini muffin tin with nonstick cooking spray.
Blend the cake and pudding mixes with the eggs and oil in a large basin. Use an electric mixer to blend for a duration of two minutes.
