Lasagna Soup

    Ingredients:

    1 pound ground beef
    1 small onion, diced
    1 green bell pepper, diced
    3 cloves garlic, chopped
    1 teaspoon ground thyme
    2 teaspoons Italian seasoning
    1/2 teaspoon salt
    1 tablespoon brown sugar
    4 cups chicken broth
    2 cans (14.5 oz each) diced tomatoes
    1 can (15 oz) tomato sauce
    2 cups lasagna noodles, broken into pieces
    1/2 cup grated Parmesan cheese
    2 cups chopped mozzarella

    Cook Beef and Vegetables: In a large pot, cook ground beef, onion, and bell pepper over medium heat until beef is browned. Add garlic and cook for 1 minute.
    Add Seasonings and Liquids: Drain excess fat from the beef mixture. Return the beef to the pot and add thyme, Italian seasoning, salt, brown sugar, chicken broth, diced tomatoes, and tomato sauce. Stir to combine and bring to a boil.
    Simmer: Reduce heat, cover, and simmer for 20 minutes.
    Cook Noodles: Add lasagna noodles to the pot and cook for about 10 minutes, stirring occasionally, until noodles are tender.
    Finish and Serve: Stir in Parmesan cheese. Serve soup in bowls and sprinkle with mozzarella. Enjoy!
