Invisible to Apples

    Invisible aux Pommes 🍏
    Invisible aux pommes is a light and soft cake, mainly composed of thin slices of apples that become almost invisible in the dough after baking. Thanks to its unique and soft texture, this dessert is a must in France for its simplicity and deliciousness.

    Ingredients
    5 to 6 apples (Golden or Pink Lady type)
    2 eggs
    50 g sugar or 25 g white sugar and 25 g brown sugar
    20 g melted butter
    10 cl milk
    70 g flour
    1 sachet baking powder
    A pinch of salt
    A little vanilla extract or cinnamon (optional)

    Preparation
    Preheat the oven to 180°C and butter a 18 to 20 cm diameter mold.
    Peel the apples and slice them into thin strips using a mandolin or a knife. The thinner the slices, the better the texture.
    In a salad bowl, whisk the eggs with the sugar until the mixture becomes frothy.
    Add the melted butter, milk and vanilla extract or cinnamon, then mix well. Incorporate the sifted flour
    , yeast and a pinch of salt, then mix until you obtain a smooth dough.
    Dip the apple slices in the dough to coat them well.
    Pour the mixture into the mold, making sure to distribute the apples evenly.

    Bake for 35 to 40 minutes, until the cake is lightly browned.
    Leave to cool before unmolding.
