Cook for about 10-12 minutes, stirring regularly, until the potatoes are tender and golden.
Egg preparation:

In a large bowl, beat the eggs with a pinch of salt and pepper.
Once the potatoes and onion are cooked, stir them into the beaten eggs in the bowl.
Cooking the tortilla:

Add the last tablespoon of oil to the pan. Pour in the potato and egg mixture.
