For the base:
1 and a half cups of crushed graham crackers
1/4 cup of white sugar
1/2 cup of butter without salt, melted
For the stuffing:
32 ounces of cream cheese, which is equivalent to 4 packages, that has been left out to soften.
1 and 1/4 cups of sugar
1 small spoon of vanilla flavor
4 big eggs
Two-thirds cup of sour cream
2/3 of a cup of heavy cream
1 tablespoon of all-purpose flour can be added for extra support if needed.
Steps to follow:
Prepare the base:
Heat the oven to 325°F (160°C) before using. Grease a 9-inch round cake pan.
In a bowl, mix together crushed graham crackers, sugar, and melted butter. Stir until the crumbs are evenly wet.
Press the mix firmly onto the bottom of the pan to create a flat crust.
Put the base in the oven for 10 minutes. After that, take it out and let it cool down completely.
Prepare the stuffing:
In a big bowl, mix the soft cream cheese until it is smooth and creamy.
Slowly mix in the sugar and beat until everything is well mixed.
Add the vanilla extract and mix well.
Add the eggs one by one, mixing well after each one.
Mix the sour cream and heavy cream until the filling is smooth. If you are using it, put in the flour and mix until everything is well mixed.
Make the cheesecake in the oven.
Spread the cream cheese filling evenly over the cooled crust.
Put the springform pan in a bigger baking dish and fill the larger dish with hot water to make a water bath. This helps avoid the cheesecake from cracking.
