Ingredients:
2 pounds of okra
1/2 cup of olive oil
5 minced cloves of garlic
1 tablespoon each of chopped rosemary, oregano, and sage
1 teaspoon of freshly chopped thyme
Juice of 1 lemon
Salt and pepper to taste
Optional: crushed red pepper to taste, 1-2 sliced jalapeños

Instructions:
1. Preheat your oven to 450°F.
2. Wash and dry the okra, then trim the stems and cut into bite-sized pieces. Toss in lemon juice in a bowl.
3. Add in all the other ingredients into the bowl. Toss the okra in the spice mixture until evenly coated.
4. Spread the coated okra on a baking sheet in a single layer.
5. Roast in the preheated oven for about 20-25 minutes, or until the okra is tender and slightly crispy.
