    Ingredients
    For the Steak Bites:
    1.5 lbs (680 g) sirloin steak, ribeye, or tenderloin, cut into 1-inch cubes
    2 tablespoons olive oil
    Salt and freshly ground black pepper, to taste
    3 tablespoons unsalted butter
    4 garlic cloves, minced
    1 teaspoon fresh thyme, finely chopped (or 1/2 teaspoon dried thyme)
    1 teaspoon fresh parsley, chopped (for garnish)
    For the Roasted Potatoes:
    1.5 lbs (680 g) baby or Yukon Gold potatoes, quartered
    2 tablespoons olive oil
    1 teaspoon garlic powder
    1 teaspoon paprika
    1 teaspoon dried rosemary or thyme
    Salt and freshly ground black pepper, to taste

    1. Prepare the Roasted Potatoes:
    Preheat your oven to 425°F (220°C).
    In a large mixing bowl, toss the potatoes with olive oil, garlic powder, paprika, rosemary or thyme, salt, and pepper.
    Spread the potatoes out in a single layer on a baking sheet lined with parchment paper.
    Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy.
    2. Cook the Steak Bites:
    Prepare the Steak: Pat the steak cubes dry with paper towels and season with salt and pepper.
    Sear the Steak: Heat a large skillet (cast iron preferred) over medium-high heat. Add the olive oil and let it heat until shimmering. Add the steak bites in a single layer (work in batches if necessary to avoid overcrowding) and sear for about 2 minutes per side for medium-rare. Remove the steak bites and set aside.
