Instructions:
Prepare the fish: Pat the fish fillets dry with paper towels. Season both sides with salt, black pepper, and garlic powder.
Set up a dredging station: Place the flour, beaten eggs, and breadcrumbs in separate bowls. Coat each fillet in flour, then dip in the eggs, and finally coat in the breadcrumbs.
Heat the oil: Heat the vegetable oil in a deep skillet over medium-high heat. The oil should be hot enough to sizzle when you add the fish.
Fry the fish: Carefully place each breaded fillet in the hot oil and fry for 3 to 4 minutes on each side, or until golden brown and crispy. Remove and drain on a plate lined with paper towels.
Assemble the sandwiches: Place a slice of American cheese on each hot fillet, then toast the hamburger buns. Spread the tartar sauce on the top bun, place the fish fillet on the bottom bun and top with the top bun. Serve immediately.
