Mini festive bites with surimi and eggs
Ingredients (for about 6 to 8 bites):
For the puff pastry:
1 roll of puff pastry
1 egg yolk (for glazing)
For the filling:
100g surimi sticks (chopped into small pieces)
2 hard-boiled eggs (chopped into small cubes)
1 small cucumber (cut into small cubes)
1 small red pepper (cut into small cubes)
2 tbsp canned corn (drained)
2-3 tbsp mayonnaise
Salt and pepper (to taste)
