Easy Salmon Skewers with Chimichurri Sauce
Ingredients:
1 lb salmon fillets, cut into bite-sized cubes
2 tbsp olive oil
Salt and pepper, to taste
Lemon wedges (for garnish)
For the Chimichurri Sauce:
1 cup fresh parsley, chopped
4 cloves garlic, minced
1/4 cup red wine vinegar
1/2 cup olive oil
1/2 tsp red pepper flakes (optional)

Preheat grill to medium-high heat.
Thread salmon cubes onto skewers, season with salt, pepper, and olive oil.
