- Prepare Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Mix Wet Ingredients: In a separate bowl, beat the egg. Add the milk, melted butter (or oil), and vanilla extract. Stir until everything is well combined.
- Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until just combined. Be careful not to overmix! A few lumps are okay.
- Heat the Pan: Preheat a griddle or non-stick skillet over medium heat. Lightly grease with butter or oil. If using a griddle, you can test the heat by sprinkling a small amount of water onto the surface—if it sizzles, it’s ready.
- Cook the Pancakes: For each pancake, pour about 1/4 cup of batter onto the pan. Cook for 2-3 minutes, until bubbles form on the surface of the pancake and the edges start to look set. Flip and cook for another 1-2 minutes until golden brown.
- Serve: Stack the pancakes on a plate and serve immediately with your favorite toppings like maple syrup, fresh fruit, or whipped cream.
Enjoy your fluffy, homemade pancakes!
