Deep Fried Marshmallows
Ingredients
1 cup pancake mix
1/2 cup milk
1 egg
1 tablespoon vegetable oil
12 large marshmallows
Powdered sugar for dusting

Directions
1. In a medium bowl, whisk together pancake mix, milk, egg, and 1 tablespoon of vegetable oil until smooth.
2. Heat oil in a deep fryer or large pot to 375°F (190°C).
3. Dip each marshmallow into the batter, ensuring it’s completely covered.
4. Carefully place the battered marshmallows into the hot oil. Fry for about 2 minutes or until golden brown, turning as necessary.
5. Remove with a slotted spoon and drain on paper towels.
6. Dust with powdered sugar and serve warm.
