Ingredients

  • 1 lb ground beef (or ground turkey)
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2-3 carrots, sliced
  • 2-3 celery stalks, sliced
  • 3-4 cups beef broth (or enough to cover the vegetables)
  • 1 can (15 oz) diced tomatoes, undrained
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup heavy cream (optional, for creaminess)

Instructions

  1. Brown the Meat: In a skillet, cook the ground beef over medium heat until browned. Drain excess fat and transfer to the crockpot.
